Kobe Beef is the most prestigious fullblood wagyu brand in the world, revered for its pure lineage and unforgettable flavour.

Kobe Beef is produced from pure blood Tajima-gyu, a black breed born and farmed in Tajima district, Hyogo Prefecture. Kobe Wagyu is regarded as the pinnacle of Japanese beef.

Once the Kobe Wagyu is processed, the meat and marbling is independently assessed for meat quality as well as the fineness and amount of marbling present. Kobe Wagyu is A5 which is the highest quality grade in Japan. It marbles at a score of 10 & 11, the absolute highest in the world.

This beautifully marbled beef has been lovingly cured by the artisans at De Palma Salumi.

Bresaola is a highly marbled, whole muscle cured meat with a luscious silky mouthfeel and exquisite flavour. The cut of meat, the topside, is chosen for its snowflake marbling and perfect formation. The bresaola is slow aged for 3 months without additives or hardeners. The result is a masterpiece with a smooth, clean and intensely buttery palate.

This product is incredibly rare and Vic's Premium Quality Meat are the first and only to offer Australian Handcrafted Bresaola from imported Japanese Kobe Beef.  

In order to maximise the flavour and aroma of any cured product, we suggest you serve the product at room temperature, or about 21ºC.
