A collaboration from two culinary icons. Australian Chef Giovanni Pilu & Pepe Saya. Pepe Saya’s rich and creamy cultured butter has been served with bread to diners in Sydney’s top restaurants and placed in pantries and fridges by those in the know for several years now. 

Known as Sardinia’s favourite seasoning, bottarga is deliciously salty air dried fish roe made from mullet fished on the Far North Coast of NSW. The bottarga is sourced and produced in Australia by Chef Giovanni Pilu. 

Giovanni Pilu is passionate about authentic Italian cooking, particularly the unique flavours of his birthplace, Sardinia. Giovanni's restaurant Pilu at Freshwater has been awarded two hats in the Sydney Morning Herald Good Food Awards.

An incredibly high percentage (50%) of Bottarga is mixed through Pepe's famous cultured butter. Creating the ultimate decadent addition to roast potatoes, pasta or atop grilled fish.
